Lentil Casserole With White Wine

Prep Time: 20 Mins Cooking Time: 2 Hours Total Time: 2 Hours 20 Mins

Ingredients:

  • 2 2/3 cups water
  • 3/4 cup lentils, uncooked
  • 1/2 cup brown rice
  • 2/3 cup onion, chopped
  • 1/2 sweet green pepper, cored, seeded, and finely diced
  • 1 1/4 cups white wine
  • 2 garlic cloves, well chopped
  • 1/2 teaspoon basil
  • salt and pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon thyme

Directions:

  1. Combine all of the ingredients (except the cheese) in a large bowl.
  2. Pour the mixture into a 1-1/2 quart casserole. Place the casserole (uncovered) into the oven (350°F) and bake for 1-1/2 to 2 hours.
  3. Remove when the casserole is moist but not runny.
  4. Sprinkle with cheese and bake for another five minutes.
