Olives marinated in rosemary, chilli and red wine vinegar

Ingredients:

  • 200g green olives in brine, rinsed
  • 200 black olives in brine, rinsed
  • 1/3 cup extra virgin olive oil
  • 2 1/2 tablespoons red wine vinegar
  • 1 chopped garlic clove
  • 2 bay leaves, fresh or dried
  • 1 small finely chopped red chilli, seeds removed
  • 2 sprigs rosemary

Directions:

  1. Place olives, olive oil, red wine vinegar, garlic, bay leaves, chilli, and rosemary in a bowl. Stir until combined. Cover and store in fridge until required.
