Pear, blue cheese & radicchio with red wine dressing

  • 60ml (1/4 cup) red wine vinegar
  • 125ml (1/2 cup) olive oil
  • Salt & freshly ground black pepper
  • 18 thin slices prosciutto
  • 60g butter
  • 3 ripe medium pears, thinly sliced lengthways
  • 3 radicchio, halved, washed, dried
  • 180g blue cheese (Roaring Forties, King Island brand), crumbled


  1. Combine the red wine vinegar and oil in a jug. Season with salt and pepper.
  2. Heat a non-stick frying pan over medium-high heat. Add half the prosciutto and cook for 1 minute each side or until crisp. Transfer to a plate. Repeat with remaining prosciutto.
  3. Melt one-third of the butter in the same pan over medium-high heat until foaming. Add one-third of the pear slices and cook for 2 minutes each side or until golden and just cooked through. Transfer to a plate and repeat in 2 more batches.
  4. Heat frying pan over medium-high heat. Cook half the radicchio, cut-side down, for 1 minute or until brown. Transfer to serving plates. Repeat with remaining radicchio.
  5. Place pear and prosciutto on radicchio. Crumble cheese and drizzle dressing.
