  • 60g (1/4 cup) bought basil pesto
  • 60ml (1/4 cup) extra virgin olive oil
  • 1 tbs chopped fresh basil
  • 1 tsp red wine vinegar
  • Salt and pepper
  • Radicicchio and cos lettuce


  1. Whisk pesto, olive oil, basil and red wine vinegar in a bowl until combined. Season with salt and pepper. Serve at room temperature, drizzled over an Italian-style salad of radicchio and cos lettuce.
