Poached peaches in white wine syrup

  • 375ml (1 1/2 cups) dry white wine
  • 375ml (1 1/2 cups) water
  • 100g (1/2 cup) caster sugar
  • 2 x 7cm cinnamon sticks
  • 1 vanilla bean, split
  • 2 whole cloves
  • 8 small (about 70g each) just-ripe peaches
  • 1 x 200g ctn natural yoghurt
  • 1 tbs rosewater
  • 1 tbs icing sugar mixture


  1. Combine wine, water, sugar, cinnamon, vanilla bean and cloves in a medium saucepan over low heat. Cook, stirring, for 5 minutes or until sugar dissolves. Add peaches. Increase heat to medium and bring to the boil. Reduce heat to medium-low and simmer, covered, turning occasionally, for 20-25 minutes or until peaches are tender. Remove from heat and set aside for 15 minutes to cool. Transfer to a large bowl. Cover with plastic wrap and place in the fridge for 2 hours to chill.
  2. Meanwhile, combine the yoghurt, rosewater and icing sugar in a bowl.
  3. Divide the peaches among serving bowls and spoon over white wine syrup. Serve with rosewater yoghurt.
