Red wine and garlic marinated steaks with warm potato salad

Prep Time: 3 Mins Cooking Time: 7 Mins Total Time: 10 Mins

Ingredients:

  • 4 heart-smart scotch fillet steaks
  • 3/4 cup red wine and garlic marinade
  • 1kg Desiree potatoes, cut into 2cm cubes
  • 1 small red onion, halved, thinly sliced
  • 1/3 cup light sour cream
  • 2 tablespoons lime juice
  • 1/3 cup mint leaves, shredded
  • 200g button mushrooms, sliced
  • Green salad, to serve

Directions:

  1. Place steaks into a ceramic dish. Pour over marinade. Turn to coat. Cover. Refrigerate for 10 minutes.
  2. Place potatoes into a saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium. Simmer for 12 minutes or until just tender. Drain. Transfer to a large bowl. Add onion. Whisk together sour cream, lime juice, mint, and salt and pepper. Pour over potato mixture. Toss gently to combine.
  3. Preheat a barbecue plate on high heat. Reduce heat to medium-high. Cook steaks for 3 to 4 minutes each side for medium. Cook mushrooms for 3 minutes or until tender. Serve with potato salad and salad.
