Slow Cooker White Wine and Herb Chicken

  • 2 cups thick-cut mushroom slices
  • 4 large carrots, peeled and cut into 1-inch pieces
  • 1 large red bell pepper, cut into 1-inch chunks
  • 2 tbsp chopped fresh basil
  • 1 1/2 to 2 lbs split chicken breast (bone-in)
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 2 tbsp fresh lemon juice
  • 1 sprig rosemary
  • Salt and pepper, to taste


  1. Layer the mushrooms, carrots, peppers and basil in the slow cooker. Top with the chicken.
  2. Spread the minced garlic onto the chicken breasts. Sprinkle liberally with salt and pepper. Pour the white wine and lemon juice evenly over the chicken and veggies. Lay the rosemary on top.
  3. Cover the slow cooker and set to low. Cook for 6-8 hours, until the chicken is cooked through.
  4. Serve.
