Sparkling wine fruit salad with passionfruit yoghurt

Ingredients:

  • 300g peeled, deseeded rockmelon, coarsely chopped
  • 300g peeled, deseeded papaya, coarsely chopped
  • 2 peaches, halved, stones removed, cut into thin wedges
  • 125ml (1/2 cup) sparkling wine
  • 1 tbs demerara sugar
  • Passionfruit yoghurt, to serve
  • 2 tbs shredded fresh mint

Directions:

  1. Combine the rockmelon, papaya, peach, wine and sugar in a large bowl. Set aside for 10 minutes to macerate.
  2. Divide the rockmelon mixture among serving glasses. Top with the passionfruit yoghurt and mint. Serve immediately.
