Sparkling wine zabaglione with fresh berries

  • 7 egg yolks
  • 215g (1 cup) caster sugar
  • 125ml (1/2 cup) sparkling wine
  • 2 x 120g punnets fresh raspberries
  • 6 amaretti biscuits, crushed


  1. Use an electric hand beater to whisk the egg yolks, sugar and sparkling wine in a heatproof bowl until thick and pale.
  2. Place bowl over a saucepan of simmering water (make sure the bowl doesn’t touch the water) and whisk for 6-8 minutes or until mixture doubles in volume.
  3. Divide the raspberries among glasses. Pour over the zabaglione and sprinkle with biscuit. Serve immediately.
