Spiced poached pears

  • 220g (1 cup) caster sugar
  • 375ml (1 1/2 cups) red wine
  • 2 cinnamon sticks
  • 2 bay leaves
  • 1 vanilla bean, split
  • 4 firm pears, peeled, halved, cored


  1. Place sugar, wine, cinnamon, bay leaves and vanilla in a pan and bring to a simmer.
  2. Add pears and enough water to cover. Cook for 15-20 minutes or until just cooked (this will depend on ripeness of pears).
  3. Remove pears, boil liquid until reduced by half, then pour over pears. Refrigerate until ready to serve.
