Thyme & white wine chicken with green olives

  • 2 tbs plain flour
  • 4 chicken marylands
  • 1 tbs olive oil
  • 1 red onion, halved, cut into thick wedges
  • 4 garlic cloves, thinly sliced
  • 185ml (3/4 cup) chicken stock
  • 185ml (3/4 cup) white wine
  • 8 sprigs fresh thyme
  • 1 lemon, thickly sliced
  • 85g (1/2 cup) green olives
  • Fresh thyme leaves, to serve
  • Mashed potato, to serve


  1. Preheat oven to 180°C. Place the flour on a large plate and season with salt and pepper. Place the chicken in the flour and turn to coat. Shake off any excess flour.
  2. Heat the oil in a large frying pan over medium-high heat. Add the chicken and cook for 3-4 minutes each side or until golden. Transfer to a 3L (12-cup) capacity ovenproof dish.
  3. Add the onion to the frying pan and cook, stirring occasionally, for 5 minutes or until soft. Add the garlic and cook, stirring, for 1 minute or until aromatic. Add the stock and wine, and bring to the boil. Pour the stock mixture over the chicken pieces in the dish. Arrange the thyme, lemon and olives over the chicken pieces.
  4. Cover and bake in oven for 1 hour or until the chicken is tender.
  5. Spoon the mashed potato among serving plates. Top with the chicken mixture to serve.
